I’ve knitted a baby jumper with a v neck and a separate shawl collar, can anyone advise me on how to attach the collar please?

What is the name of your pattern?
You could use mattress stitch to set in the collar so the seam is to the outside. The collar will fold over and cover it. Another possibility is a sewing backstitch again with the seam to the outside.
Is the collar going to be open at the point of the V?
Whatever you do you want the collar to be stretchy enough to easily go over the head.

I recently discovered a method of seaming using a crochet slip stitch, you might consider this or try it on a swatch to see if you like it. The seam is a little more stretchy and softer than mattress stitch and also you can alter the stretch and softness to a degree by altering the hook size. The inside of the seam looks very similar to a mattress stitch finish (ie a ridge). It took me a little longer to use this method but I liked the result.
