Assembling parts for a stuffed animal

I found a knitting pattern for a cute stuffed elephant. Each part is knitted separately and then put together. I was wondering if anyone has some nifty tricks on how to attach the different parts easily and cleanly. The first ear that I tried to attach, it looked so messy that I ended up just cutting it off and making a new one. Any tips would be helpful!

I usually use a firm overcast st to attach arms, legs, etc and that seems to work pretty well. If at all possible, I change the pattern so that I can pick up sts on the body and work parts from there to the end. That eliminates the step of attaching pieces.
