2x1 neck ribbing for v-neck sweater vest -- how to?

Hi:

I am modifying a pattern for a sweater vest, but making it a v-neck sweater vest. I forgot I used 2x1 ribbing for the body and have to repeat it for the neck and arms.

My question is — how would you go about 2x1 ribbing for a v-neck? I currently have 31 sts for the V – 15 on the left, 15 on the right and 1 for the center stitch. I was hoping to do something like below, but also realize that it is probably seamed together. Just curious how the decreases would work and what to do with the middle stitch; I had planned to slip it.

I’ve used a centered double decrease at the point of the V or worked a decrease as in this pattern. It’s not the seamed look of the V you posted but leaves a neat column up the center.
