Pattern says to cast on 30:
1st row: K2 YO, repeat ** across, ending in K2.
This isn't working, after my last YO I still have 3 stitches on my needle instead of 2.
Could I be doing my YO wrong?

It should work out evenly. To work k2, yo, just bring the yarn to the front between the stitches as if to purl and then knit 2 stitches. Don't count the first stitch as part of the yo.
You should end up with 14 yos. This will leave you with 44 stitches.
Check the pattern to make sure that you're not supposed to work k2tog in there to offset the increases made by the yos.
This may sound stupid, but have you checked to see that you cast on the correct number of stitches?
