I am not a fan of using circular needles but want to make this pattern
Am i right in thinking i can just knit it with normal needles and just sew up the seam myself?
You may be able to convert the pattern. I can't get the link to work though. Could you check the link and maybe re-post it or give us the name of the pattern?

Yes, a hat can be knit flat and then seamed.
Nice instructions for this hat. The ribbing will work out fine knit flat but of course, you'll have to knit one row then purl one row for the body of the hat. I don't think with such a bulky knit that you'll need to add in 2 extra sts for the seam but you might consider it. The earflaps are knit back and forth anyway so you should be good to go.
